We tried a small sample of this incredible wine – Scholium Project Choeporoi Chardonnay. This is Chardonnay from two vineyards: Los Olivo in cool, southern Napa Valley and Tenbrink in warm Suisun Valley. It took two years to ferment in neutral barrels, no sulphur added, no lees stirring, giving a unique and delicious taste: Caramel, lemon curd, hazelnuts, honeysuckle, rocks. 248 cases made.

The Scholium Project (from the Greek ‘scholion’, meaning school) is the brainchild of Abe Schoener, an ex-philosophy professor turned winemaker with a mission to show what he considers real Californian terroir. He treats the winemaking as a project, a learning process.  The approach is entirely non-interventionist, allowing natural yeasts and enzymes to control fermentations without any cultivated additives. Fascinating and individual wines.
